Matador

Matador has been a staple of Thunder's menu, and is a rotating offering of South/Central American coffees. For Matador we always target chocolatey, comfy flavors and a medium roast level.

This Matador is a pulped natural process yellow bourbon that’s loved on drip, and a favorite for cold brew. It comes to us from Fazenda Rio Brilhante, a coffee estate in a flat and low elevation area known as the Pâtano micro-region in Minas Gerais, Brazil. It is a family owned and operated estate, run by Inácio Urban, his daughter, son, and son-in-law. 

In 2020, Fazenda Rio Brilhante was awarded first place in the Ethics and Traceability Award for its commitment to creating programs to develop people, preserve the environment, and promote responsible agribusiness. It is also Rainforest Alliance and 4C certified.

On the cupping table, we find it to be one of the best coffees from Brazil that we’ve had. It has a rich body with approachable notes of caramel and almond, with a brighter taste of dried berry cutting through.
