Description

Matador is back, with this version going back to the Chiapas region of Mexico! This time around we have a wonderful washed lot from La Concordia.

The Nuevo Paraiso community, in which the coffee is grown, is known for its flat but mountainous terrain. We find this lot grown at 1400-1600 MASL, with the primary varietals being Bourbon, Marsellesa and Costa Rica. The coffee undergoes fermentation for aproximately 40 hours, followed by 12-15 days of drying on raised beds.

A unique piece of Nuevo Paraiso's identity is that a large percentage of the farmers are women. In the past few decades, many of the male inhabitants of the area have moved away in search of opportunity in other regions or countries. The sudden shifts in ownership and responsibility have been a challenge, but the new leaders have adapted incredibly well.
