Rhinestone Cowboy is back in our lineup and this time here to stay. It will now represent washed, single origin offerings from South America and country of origin will rotate seasonally or as supply allows.
Today's Rhinestone Cowboy comes from Cafe Agrario in the Tolima region of Colombia. Grown at 1800 MASL, this lot is a blend of Caturra and Typica varietals. The coffee cherries are picked once every 20 days, with farmers receiving a premium for ripe cherry selection. Then the coffee undergoes a 24-hour fermentation before being washed thrice and brought to dry on beds.
In this particular lot we taste raisin on the front, followed up by a nice, cozy combination of caramel in walnut. These flavors are accompanied by a body that reminds us of sipping chocolate, decadent and sweet. We find it super sessionable and an awesome daily-drinker.
Cafe Agrario is an association of farmers in Tolima that is delivering its first coffees to our sourcing parters at Falcon coffee this year! Due to leadership struggles and difficult conditions regarding war in the growing region, the farmers have had to overcome many struggles in order to get this coffee out to the world.
Through a partnership with Falcon's sourcing parters at Siruma, though, they have been participating in workshops and developing their skills to make their coffee better and better. Examples of improvements from their organization include better water management practices and distributing their own organic fertilizer across producing farmers. They are currently even working towards having their own warehouse from which to export their coffees.
