Our next Lightning in a Bottle is a Semi-washed Pink Bourbon from producer María Belén Díaz and her farm, El Resina, in Huila, Colombia.

María is the daughter of a coffee farmer, and now has 12 years of experience as well as being  one of the first women to receive certification from Forest Coffee, She and her husband Narciso grow many varieties including Papayo, Caturra, Castillo, Pink Bourbon and Gesha. Both she and her husband arrived in the municipality of Acevedo as workers and were eventually able to start a farm of their own.

This lot in particular is made up exclusively of Pink Bourbon, a cross between the Bourbon variety and and Ethiopia landrace with a signature pink cherry color. As well as the variety, it goes through unique but unintrusive processing with regards to the final cup. The lot receives an initial 36-hour fermentation while in cherry, followed by another 24 hours in sealed bags with mucilage blankets. These fermentation stages bring out bold flavors while maintaining the complexity and sessionability associated with washed coffees.

In the cup, this one is really playful and delightfully acidic. An immediate citric acid note brings to mind sour candy and a backup bouquet  of florals serves to round the cup out.
