Description
This lot comes from Finca El Venado, one of the two farms producing beans to be processed at the Cerro San Luis Micromill. Finca El Venado is owned by Alexander Delgado, while his sister owns Finca Al Alquimia adjacent to his holdings. The siblings own Cerro San Luis jointly and the family works together to grow and process 10 different varieties of coffee, including SL28, Gesha and Maragogype.
Processing also plays a factor in this coffee's story, as it undergoes a honey process. The honey process is Costa Rica's specialty, with some of the mucilage being left on instead of all or none. This leads to an interesting cup with the clean characteristics of a washed but a bit more process character.
In the cup, this one is what we come to love and expect from a Gesha with just a tich of ferment character from the honey process. The cup starts with a baseline of jasmine that is complemented by a sharp lemon and a sweet blueberry.
